An original For Good Granola recipe
This salad is meant to be lightly dressed to let the bright, sweet, tart, and earthy flavors shine.
Ingredients
SALAD INGREDIENTS
16 oz mixed leafy greens, chopped ortorn into bite-sized pieces
2 medium apples, cored and thinly sliced (try Granny Smith, Fuji, Honeycrisp, Pink Lady, or similar varieties)
4 large radishes, thinly sliced
3/4 cup pomegranate seeds (from half a medium pomegranate)
4 oz gorgonzola or blue cheese, crumbled or broken into pieces
SALAD DRESSING
3 tablespoons red wine vinegar
Zest of 1 lemon
3 tablespoons lemon juice (plus more to taste)
1 tablespoon Dijon mustard
2/3 cup olive oil
Salt and pepper, to taste
Directions
Step 1
In a medium bowl, whisk together the vinegar, lemon zest, lemon juice, and Dijon mustard. Slowly drizzle in the olive oil while whisking continuously until the dressing is emulsified. Season with salt and pepper to taste. Adjust with additional salt, pepper, or lemon juice if needed.
Steps 2
In a large bowl, combine the mixed greens, apples, radishes, pomegranate seeds, and granola. Add one-third of the dressing and gently fold until the salad ingredients are evenly coated.

Taste the salad and adjust with additional dressing, salt, or pepper, if needed.
Steps 4
Transfer the salad to individual plates or a large serving platter. Top with gorgonzola or blue cheese. Serve immediately and enjoy!
