visit your local cheese shop or a grocery store with a large cheese section to find a premium quality ricotta. this will ensure a creamy texture and rich flavor that isn't watered down.
Ingredients
Grilled Plum Chutney
3/4 lb firm ripe plums, halved and pitted
2 scallions, trimmed
1 serrano pepper
canola or grapeseed oil
2 t whole grain mustard
3 T fresh mint, roughly chopped
1 T fresh dill, roughly chopped
2 T honey, plus more tt
1 t lemon juice, plus more tt
tt salt & pepper
Bruschetta
1 baguette, cut on bias, toasted in oven or on grill
12 oz fresh, good quality ricotta, seasoned with salt
and pepper
dill, for garnish
Directions
Step 1
Preheat gas grill to high heat or light a charcoal grill and let coals burn until hot and covered in white ash. You want to achieve a cooking temperature of approximately 450 degrees.
Step 2
Place plums, scallions and serrano in a large bowl and toss with a tablespoon of oil until evenly coated. Season with salt and pepper.
Step 3
Clean and oil grill grates. Place plums, scallions, and serrano directly on grill grates and cook, while turning, until charred and softened, about 4-7 minutes. Remove ingredients from grill and place in bowl as they reach desired doneness. Scallions will cook faster than plums and serrano.
Step 4
When cool enough to handle, remove stem and seeds from serrano, then finely dice. Cut plums to small dice and and roughly chop scallions. Return all chopped ingredients to bowl.
Step 5
To plum mixture add mustard, mint, dill, honey, and lemon juice. Season with salt and pepper. Taste and adjust flavor with additional salt, pepper, honey and lemon juice.
Step 6
To assemble, spread about 1.5 tablespoons of seasoned ricotta on each toasted baguette slice, spoon plum chutney over the top and finish with Cranberry Spice granola. Garnish with dill and serve.
