Ingredients
2 T flax seed meal
2 T brown rice flour
1 T chia seeds
1 cup boilingwater
Directions
Step 1
Preheat the oven to 350 degrees. Line a rimmed baking sheet with parchment paper.
Step 2
In a heat-safe medium bowl, combine flaxseed meal, brown rice flour, granola, and chia seeds. Pour the boiling water over the mixture and stir until everything is well combined with no dry spots remaining. Cover with a kitchen towel and let sit for 15 minutes, until the mixture is thick, sticky, and all the water is absorbed.
Step 3
Transfer the mixture to the prepared baking sheet. Spread it out evenly to create a thin layer, making sure there are no gaps or holes.
Step 4
Bake for 35-45 minutes, or until the crackers are deep golden and dry to the touch. They should feel hard and crisp.
Step 5
Let the crackers cool completely on the baking sheet, then break them into serving-sized pieces.
