About the Recipe

An original For Good Granola Recipe

Ingredients

  • 1 1/2 cups powdered sugar

  • 1/3 cup cocoa powder

  • 1/2 t salt

  • 1 t cornstarch

  • 1 t guajillo chile powder, optional

  • 2 egg whites

  • 1 t vanilla bean paste (sub 1:1with vanilla extract)

  • 1 1/2 cups For Good Granola, Chocolate Chile

  • flaked sea salt + additional chile powder

Directions

Step 1


In a large bowl, whisk together the powdered sugar, cocoa powder, salt, cornstarch, and chile powder (if using).


Step 2


Add the egg whites and vanilla extract to the dry mixture. Whisk until the batter has the consistency of pourable hot fudge. The batter will seem very thick at first, so take care not to overmix once it reaches the hot fudge consistency. Gently fold in the granola.


Step 3


Using a 1-tablespoon portion scoop, drop the cookie batter onto two parchment-lined rimmed baking sheets, dividing the batter equally between the two sheets. Let the portioned batter rest at room temperature on the baking sheets for 30 minutes.


Step 4


Preheat your oven to 350°F and adjust the oven racks to the upper-middle and lower-middle positions.


Step 5


When ready to bake, sprinkle the cookie portions with a pinch of chile powder and flaked sea salt. Bake for 12 minutes, or until the cookies are slightly puffed, with crisp edges and tops that are slightly cracked and shiny.


Step 6


Allow the cookies to cool completely on a cooling rack before serving or storing.
