time saving tip! you can find grilled corn in the frozen vegetable section of Trader Joe's. substitute 1 cup defrosted frozen corn for the 2 ears called for in this recipe.
Ingredients
PANEER
2 T cornmeal, fine
1 t turmeric
1 t chili powder
2 t garam marsala
2 t curry powder
1 t salt
14 oz paneer, cut into 1" cubes
3 T all-purpose flour (can substitute gluten-free)
1/2 cup water
CORIANDER CHUTNEY
16 almonds, unsalted, roasted, roughly chopped
1 cup cilantro, leaves and tender stems, well packed
1 garlic clove, peeled, roughly chopped
1 1/2 T lemon juice, plus more tt
2 T orange juice
1 t honey, plus more tt
CORN RELISH
2 ears corn, grilled, then kernels cut away from ear
1/2 cup red bell pepper, finely diced
2 scallions, thinly sliced
1 t lemon juice, plus more tt
Canola or grapeseed oil, for frying
6 T For Good Granola, Sweet Curry, for serving
Lettuce cups, for serving
Directions
Step 1
In a large shallow baking dish or bowl, mix to combine cornmeal, turmeric, chili powder, garam marsala, curry powder, and salt. Set aside.
Step 2
To make chutney, add all chutney ingredients and a pinch of salt to a pitcher of a high powered blender or food processor bowl. Process until smooth. Taste and adjust with additional salt, honey, and lemon juice. Set aside.
Step 3
To make corn relish, add all relish ingredients and a pinch of salt to a medium bowl. Toss to combine. Taste and adjust with additional lemon juice, salt and pepper. Set aside.
Step 4
Pat cubes of paneer dry with paper towels. Toss paneer in cornmeal spice mixture (assembled in Step 1). Remove paneer from cornmeal while vigorously shaking so only a dusting of cornmeal spice remains on paneer. Place dusted paneer on a separate plate.
To remaining cornmeal spice mixture add 3 tablespoons of flour and 1/2 cup of water and whisk until combined and thick batter forms. Gently fold cubed paneer into batter until well and evenly coated.
Step 5
To fry paneer, heat about one inch of oil in shallow pan until hot. Test the oil temperature by adding a batter covered paneer cube, tiny bubbles should form around the paneer.
Fry paneer, in 2-3 batches, for 2-3 minutes, turning halfway through, until a dark golden color and crispy. Transfer to a paper towel lined plate and sprinkle with salt.
Step 6
To assemble, fill individual lettuce cups with a few pieces of warm fried paneer, top with relish, chutney, and finish with a sprinkling of Sweet Curry granola. Serve immediately.
