An original For Good Granola Recipe
Note: This baked brie can be prepared up to Step 4 and stored in the refrigerator for up to 3 days. To store, place the wrapped brie in the pie dish and cover the dish tightly with plastic wrap. When ready to bake, remove the brie from the refrigerator, unwrap it, and brush the top and sides of the puff pastry with beaten egg. Bake as directed.

3 T apricot preserves
1wheel soft Brie (8 oz)
1 sheet frozen puff pastry, thawed per package

honey or additional apricot preserves
crackers, toasted baguette, or sliced fruit
Directions
Step 1
Preheat your oven to 400°F and adjust the oven rack to the middle position. Line the bottom of a pie dish with parchment paper. If the parchment won’t lay flat, crumple it up, smooth it out, and then place it in the dish.
Step 2
In a small bowl, combine the granola and apricot preserves. Remove all packaging from the brie round. Using a long knife, cut the brie in half crosswise (like a hamburger bun). Spread 2/3 of the granola mixture onto the cut side of one half of the brie. Place the other half of the brie on top, cut side down, forming a sandwich. Set aside while preparing the puff pastry.
Step 3
On a lightly floured work surface, roll thawed puff pastry into a 12-inch square. Using a knife, trim the pastry into a 9-inch circle. Brush the edges of the pastry circle with beaten egg.
Step 4
Place the prepared brie in the center of the puff pastry. Spread the remaining 1/3 of the granola mixture on top of the brie. Carefully wrap the brie in the pastry, pleating the edges at even intervals and leaving a small opening at the center. Transfer the wrapped brie to the parchment-lined pie dish.
Step 5
Brush the top and sides of the pastry with the beaten egg. Bake the wrapped brie in the preheated oven until the puff pastry is a deep golden brown, about 30–35 minutes. Remove from the oven and allow the brie to rest on a wire rack for 5–10 minutes. Transfer to a serving platter and drizzle with honey or additional preserves. Serve warm with crackers, slices of baguette, or fresh fruit.
